The zipped ASCII text extracts included a document called Readme.txt that described the file format of each of the Standard and ANS text extracts, this Readme document is now available online.
However, this document has largely been replaced by online documentation.
Each text extract is produced by an XSL stylesheet. The stylesheet responsible for creating the text extract includes the description of the file format.
